Recipe: Anjali Chocolat’s Classic Dark Chocolate Truffles

225g dark chocolate (70% cocoa content)

200g heavy cream

2 tablespoons unsalted butter at room temperature

Melted chocolate for coating

Cocoa powder for finishing


1. Chop the chocolate into small pieces and place in a mixing bowl

2. Heat the cream in a small pot, till it reaches scalding point

3. Pour the cream over the chocolate and let sit for a minute, to allow the chocolate to melt

4. Emulsify the mixture, using a spatula

5. Add softened butter and incorporate thoroughly

6. Cool the ganache in the refrigerator for 30 minutes

7. Remove from refrigerator, and using a teaspoon, scoop out and roll into truffle balls

8. Return to the refrigerator, to cool, for 10 minutes

9. Gently melt chocolate over a double boiler, making sure no steam goes into the chocolate

10. Coat each truffle in melted chocolate, and roll in cocoa powder

11. Return to refrigerator to crystallise, overnight

12. Enjoy!
