Brent Savage x V Dining Vegetarian Takeover

Just for two days, fine-dining restaurant, V Dining, together with Chef Brent Savage, is serving a mouth-watering vegetarian feast on 26 and 27 July.

Chef Brent Savage is chef and co-owner of celebrated restaurants, Bentley Restaurant & Bar, Monopole, and Yellow and Cirrus in Sydney, Australia. His unique cooking style combines exquisite culinary techniques and a superb mastery of flavours. In addition, accolades to Chef Brent’s name include Sydney Morning Herald Good Food Guide Chef of the Year in 2005 and 2015.

Chef Brent is supported by V-Zug’s Global Ambassador, Chef Ryan Clift during the takeover in creating the epicurean menu consisting of four-course lunch or six-course dinner. As a global ambassador, Chef Ryan Clift participates in menu developments and product launches. Furthermore, he also owns the Tippling Club. The Tippling Club is a contemporary gourmet restaurant that serves up fun, fresh and playful cuisine.

Brent Savage x V Dining Menu

Both the lunch and dinner menu start off with two snacks. These are the ‘Beet-strami’ and horseradish and fermented mushroom hand roll with algae tempura.

Starting with the mains, Chef Ryan’s first dish consists of Shin Jyagaimo potatoes. Following this is Chef Brent’s tasteful blend of onion, stracciatella, tonburi and eucalyptus.  Next up is Chef Ryan’s savoury salt-baked celeriac and burrata with black truffle. Then, Chef Brent rounds up the main courses with a dish of green rice, broad bean shots and kohlrabi sauce.

The menu ends on a sweet note with citrus curd tart with red miso and fermented pumpkin sorbet by Chef Brent.

Lunch: 12nn to 2.15pm

Dinner: 6pm to 9.15pm

27 July (Saturday)

Dinner: 6pm to 9.15pm

Prices are at $70++ per person (lunch), $150++ per person  and $250++ per person (dinner, and dinner with drinks pairing respectively).
